If you are like me, you have more than enough knives - maybe it is a guy thing. Well, with me I am really into sharpening things. I have a professional knife sharpening rig and sharpen knives for many people and have come to have an opinion on steel and knives in general. To me, this is the perfect knife. The steel loves to be sharpened using very light pressure on my Tormek and the standard stone. Furthermore, the steel can be ground razor sharp without even using the leather wheel, making a very long lasting cutting edge - no small feat. If you want to refine it into a hair popping edge, it takes it very easily however the ultimate polished edge on this knife won t last you a week of my use. No worries though - it sharpens right back up with very little loss of metal.
